Terroir: This cuvée grows in oak and acacia barrels. It comes from the best soil of our property and from our oldest vines (+ than 60 years old)

Production method: with Terra Vitis I get involved in an alternative course of action, that respect my vine, my soil and the ecosystem to be able to leave a insignificant imprint on the environment. This process guarantees a traceability controlled by an independent certifying agency. This is the most efficient way to produce a wine of great quality.

Winemaking: The secret to this cuvée comes from the balance between a wine of great character and acacia and oak barrels which are 3 to 6 years old. The “Fût Vieilles Vignes” selection is vinified and grows “on lees” during 12 months with regular stirring that gives it fluidity and delicacy. Bottles are stored in our cellars during 2 to 3 years so that they age perfectly.

Tasting: this “Vieilles Vignes” cuvée has a tough flavor and a good length in mouth; it has to settle during 4 to 8 years to be at its best. Then we have a harmonious wine that pleases your palate with its rich pallet of flavours. Its nose is composed of honey and acacia flower odors. The oak barrels bring a grilled-toasted note at the end. If you are patient enough, you can keep this wine 10 years.

Advice: If you serve it at 12°C, this exceptional wine will be great with high quality products like Foie Gras, St Jacques, zander and pike with white butter sauce. Also great with “poule au pot” or blanquette of veal.
